Food Friday: Pasta with Spinach and Feta

Pasta with Spinach and Feta

Ingredients
  • 300g penne pasta (or other shape as desired)
  • 2 T olive oil
  • 1c onion, diced
  • 1 clove garlic, minced
  • 2 c fresh spinach, chopped
  • ¼ c water
  • 2 tsp lemon juice
  • pepper to taste
  • 100g feta cheese, crumbled
Instructions
  1. Cook the penne pasta in a large pot of salted water. Drain and set aside.
  2. Heat the oil in a frying pan over medium heat. Saute onions and garlic until lightly browned. Add the spinach and water and cook for 3 more minutes.
  3. Add the pasta and heat through. Remove from heat.
  4. Add lemon juice, pepper, and feta cheese and toss again. Serve immediately.
