Ingredients
- 300g penne pasta (or other shape as desired)
- 2 T olive oil
- 1c onion, diced
- 1 clove garlic, minced
- 2 c fresh spinach, chopped
- ¼ c water
- 2 tsp lemon juice
- pepper to taste
- 100g feta cheese, crumbled
- Cook the penne pasta in a large pot of salted water. Drain and set aside.
- Heat the oil in a frying pan over medium heat. Saute onions and garlic until lightly browned. Add the spinach and water and cook for 3 more minutes.
- Add the pasta and heat through. Remove from heat.
- Add lemon juice, pepper, and feta cheese and toss again. Serve immediately.
