Ingredients
- 3 T butter
- 2 eggs
- 2 tablespoons oil
- 375ml milk (1½ cups)
- 1 tablespoon sugar
- 2 cups yellow cornmeal
- 1 tsp baking powder
Instructions
- Preheat the oven to 425 degrees F.
- Put the butter in an ovenproof cast iron pan and put it into the oven to melt.
- Beat the eggs in a mixing bowl, add the oil, milk and sugar, and mix well.
- Add the cornmeal and baking powder and stir a bit. Do not stir too much or the cornbread will come out tough.
- Using oven mitts, take the pan out of the oven and shake the melted butter around to coat the pan evenly.
- Spoon the cornbread batter into the hot pan, return to the oven and bake for 15 to 20 minutes.
