Ingredients
- 450g Bluegill, or other fish
- ¼ cup flour
- 1 egg
- ½ tablespoon milk
- 15 soda crackers, crushed
- ½ teaspoon parsley flakes
- ½ teaspoon basil
- ¼ teaspoon oregano
- ⅛ teaspoon garlic powder
- ½ cup parmesan cheese
- ½ cup butter or cooking oil
- Pat the fish fillets dry with paper towels. Dredge the fish in flour, and shake off the excess.
- Mix the egg and milk in a bowl.
- In a separate bowl, mix the crackers, seasonings, and cheese. Dip the fish in the egg mix, then in the cracker mix.
- In a frying pan, heat the butter on medium-high. Place the breaded fish in the pan, skin side up. Fry until golden brown.
