Food Friday: Fried Bluegill Parmesan

Fried Bluegill Parmesan
Ingredients

  • 450g Bluegill, or other fish
  • ¼ cup flour
  • 1 egg
  • ½ tablespoon milk
  • 15 soda crackers, crushed
  • ½ teaspoon parsley flakes
  • ½ teaspoon basil
  • ¼ teaspoon oregano
  • ⅛ teaspoon garlic powder
  • ½ cup parmesan cheese
  • ½ cup butter or cooking oil
Instructions
  1. Pat the fish fillets dry with paper towels. Dredge the fish in flour, and shake off the excess.
  2. Mix the egg and milk in a bowl.
  3. In a separate bowl, mix the crackers, seasonings, and cheese. Dip the fish in the egg mix, then in the cracker mix.
  4. In a frying pan, heat the butter on medium-high. Place the breaded fish in the pan, skin side up. Fry until golden brown.
