Ingredients
- 1 cup flour
- 2 tsp lemon peel, grated
- ½ tsp salt
- ½ tsp lemon pepper
- 200ml water
- 50 ml lemon juice
- vegetable oil (for frying)
- 700g bluegill fillets
- flour
- Blend flour, lemon peel, salt and lemon pepper. Add water and lemon juice and mix well.
- Heat 5cm of oil in a fryer to 375°.
- Coat fish in flour. Dip in batter.
- Fry 3 minutes. Drain on paper towels.
