Food Friday: Lemon-Fried Bluegill

Lemon-Fried Bluegill

Ingredients
  • 1 cup flour
  • 2 tsp lemon peel, grated
  • ½ tsp salt
  • ½ tsp lemon pepper
  • 200ml water
  • 50 ml lemon juice
  • vegetable oil (for frying)
  • 700g bluegill fillets
  • flour
Instructions
  1. Blend flour, lemon peel, salt and lemon pepper. Add water and lemon juice and mix well.
  2. Heat 5cm of oil in a fryer to 375°.
  3. Coat fish in flour. Dip in batter.
  4. Fry 3 minutes. Drain on paper towels.
